All Points West Distillery was founded by Gil Spaier. An architect and building renovator by training, he took up baking as a hobby. Baking is a function of yeast. That led to milling his own grain. Handling yeast and milling his own grains led to home-brewing. And home-brewing led him to distillation, founding his passion project in 2017. He had the idea to use traditional Irish pot-still methods on a barley and corn Spirit. In his second year his first Whiskey was awarded the Gold Medal AND "Whiskey of the Year" from the USA Spirit Rating Competition.

Like many upstarts, while your first batches of Spirit are resting comfortably in their barrels to mature, All Points West launched with Vodka and Gin to help pay the bills.
